Line a loaf pan with parchment paper. Mix together the finely diced papaya, almonds, flaxseed, and rolled spelt flakes in a mixing bowl.
In a saucepan, melt the butter. Add in sugar, honey and orange juice. Bring the mixture to a boil, then simmer for about 3 minutes until the mixture is caramelized.
Remove from the heat, stir in the spelt mixture. Pour the mixture into the prepared pan. Cover it with a plastic wrap and press it down. Cool it for 20 minutes before slicing into squares.
