柠檬酪罂粟籽拇指饼干

材料:

柠檬酪饼干
  • 2个 鸡蛋
  • 130克 细砂糖
  • 65克 黄油
  • 2个 柠檬皮末和汁
  • 280克 中粉
  • 1小勺 柠檬皮末
  • 1/5小勺 食盐
  • 200克 无盐黄油,室温
  • 60克 细砂糖
  • 1个 大蛋黄
  • 1小勺 柠檬香精
  • 50克 罂粟籽

  • 做法:
    1. 鸡蛋和砂糖放入锅里搅拌均匀,加入黄油,柠檬汁和皮末。低火加热,不时搅拌直到材料浓稠。过滤到一个用高温消毒后干净的玻璃瓶里。柠檬酱加盖放冰箱的话,大概能保鲜2周。
    2. 面粉,食盐和柠檬皮末放入盆里混合拌匀。用搅拌器搅打黄油和砂糖直到松发。加入大蛋黄和柠檬香精打匀。筛入粉类拌成团。工作台洒粉,放上饼干团,将其塑成扁圆片状。用保鲜膜包好冷藏30分钟。
    3. 烤箱预热至180C/350F。烤盘铺纸备用。将面团揉成1寸大小的圆球,滚上一层罂粟籽后,放在备好的烤盘上。用拇指在表面轻轻按成凹痕。在每个饼干的凹痕填入1/2小勺左右的柠檬酪。送入烤箱烘烤15-18分钟直到淡黄色。取出后架上晾凉。
