中式贝壳酥

材料:

水油皮油酥皮内馅
  • 150克 中筋粉
  • 60克 白油
  • 15克 糖粉
  • 60毫升 水
  • 70克 低筋粉,
  • 50克 可可粉
  • 60克 白油
  • 100 克 罂粟籽馅或豆沙馅

  • 做法:
    1. 将水油皮的所有材料一起拌匀用手搓揉2分钟成团状即可。松弛15分钟左右即可。
    2. 将油酥皮材料拌匀即可使用,不要揉搓,因为是酥油,所以也不可能揉搓成光滑面团的。两种面团均分成3份。
    3. 在洒了薄粉的工作台上,将水油皮揉圆后压平,把油酥放手掌上压扁平,再放油皮上重迭压扁平,皮比油酥大一点点,用杆面棍轻轻擀开成牛舌饼状,卷起竖放。然后再擀成牛舌状,同样的动作在重复一次,小心擀开,不要把油酥给擀出来。要不然面皮就不会有层次和酥化了。
    4. 用手稍微轻压两边整形成短肥状,然后切成四段。将切口有螺旋纹的那一面朝下用手直接压扁,擀成大约3寸的圆形。
    5. 取约1小勺馅料放入饼皮中心,包好后排入烤盘。入预热180C/350F烤箱烘焙18-20分钟即可。
