Spicy Szechuan Eggplants / ÓãÏãÇÑ×Ó


Ingredients / ²ÄÁÏ:
  • 450 g Eggplant
  • 3-4 tbsp Oil
  • 1 tbsp Garlic, minced
  • 1 tbsp Ginger, minced
  • 2 tbsp Hot bean paste
  • 1 tbsp Soya sauce
  • 1 tbsp Black vinegar
  • 1 tbsp Chilli oil
  • 180 ml Chicken broth
  • 2 tsp Cornstarch
  • 2 tsp Water
  • 1 tbsp Scallions, chopped
  • 450¿Ë ÇÑ×Ó
  • 3-4´óÉ× Ê³ÓÃÓÍ

Method / ×ö·¨:
  1. Peel and slice the eggplants into sticks, about half inch thick. Steam until tender and drain. Heat oil in a large skillet until hot over medium heat. Stir in garlic, ginger and hot bean paste.
  2. Return the eggplants to the skillet. Add in soya sauce, vinegar, chilli oil and chicken broth. Increase the heat to high, cover and bring to a boil. Reduce the heat to medium and cook until the liquid is reduced by half.
  3. Dissolve the starch into the water. Slowly add in the starchy solution and stir frequently until thickened. Transfer to a serving bowl and drizzle with chopped scallions.
